Green Beans Salad, Thanksgiving and Buy Nothing Day

It has been said over and over again that obesity and poverty go together. Just watch The Weight of the Nation: Poverty and Obesity.

However, eating healthy can be cheap, it does not have to break the bank.

I have previously promised to post recipes that are both cheap and healthy. Here is one quick recipe for green beans salad that could be a side dish or a topping on a whole wheat toast.


Green beans salad recipe 

IN MY PANTRY
I use canned beans, but I make sure that there is no added sugar. Drain the green beans (any style green beans you prefer). Add salt to taste, olive oil, minced garlic, and vinegar or lemon juice. Mix and enjoy.

Optional: if you have a few walnuts, chop some in the salad (or use mortar and pestle to to grind the walnuts). I usually make a bigger batch of the salad, and keep it in a glass jar in the refrigerator for 2-3 days.

This salad is a great side dish for Thanksgiving as well.
